Twelve men were given the challenge to create family entertainment other than saloons and casinos. After traveling the world they came up with the idea of holding horse races. Since they saved Omaha, they decided to name their organization after their great state and with everything else going backwards in Nebraska, they would reverse the name of Nebraska and call themselves the "Knights of Ak-Sar-Ben". They also decided to use Nebraska's state colors to represent their group and used red for beef, yellow for corn, and green for wheat. 

These twelve great men inspired the creation of the Ak-Sar-Ben Brewing Company.
